Why do all the espresso drinks at caffe dolla taste better than what we usually have?
The simple answer is “We care more”. There are only a handful of shops throughout North America that do what we do. At caffe d’bolla, every drink is ground fresh and made by the cup. This critical step, which is often ignored, preserves the flavors and essence of the espresso until the very last moment, and it all translates to the cup. Other factors include proper dosing, leveling, tamp pressure, and extraction…. not to mention proper brew temperature for different espresso as well as adjusting the grind to maintain proper flow and extraction. Tasting coffee, tasting espresso, learning from my coffee brethren, and then tasting some more. It all comes to life in the cup.
