It’s a primitive form of air conditioning,warm air rises and so cool air is drawn into the room,the taller the ceilings,the more circulation is generated.What you have to bear in mind is these structures were built pre electric and were heated by Solid fuel,easy to increase the heat,but more difficult to cool,the alternative was to move inland/higher in summer,not always practical.The proof is in how cooler in summer,and how much colder in winter they are.
