The reasoning for it was thought up AFTER the look was introduced. Gene Roddenberry originally wanted Spock to be bright red with an orafice in his chest to absorb energy to survive but it was thought to be way too out there, concept AND budget-wise. After trying many differnt tries, he settled on slightly green skin with pointed ears. It was due to the ease of making the prostetic and it was automatically associated with being different from the norm. For the fiction of the series, Vulcan’s ears developed points over years and years of evolution. Due to the thinner air of the planet Vulcan, the Vulcan ear developed a slightly larger size and shape than the human ear in order to pick up sounds being carried with less effeciency in the thinner air of their enviroment.
