Why does my Toyota Yaris 1.0 hold back when I am accelerating?

mmmm, the Yaris does not hve a dash pot, this is very old technology used in the Austin Mini and similar engines.. You get cheap insurance and good economy, and you need to drive it hard with the revs up higher when needed. The good news is that the engine is built to take this extra ‘stick’. Congratulations on owning a great little car. It was car of the year when launched. The VVT variable valve timing was the latest engine modification. The Yaris 1.0 with V V T, is how they get more power from a smalll engine. Basically what happens is the valve settings change when you accelerate hard, this takes a few seconds for the adjustments happen, and this causes a ‘lag’ similar to a turbo charged engine. V V T means that during the lower acceleration around town, the vehicle uses much less fuel as it is only a 1000cc anyway. When the valve timing settings are altered, this will use more fuel and give additional power and performance , only at higher revs as you describe.
