To rely on naturally occurring pectin for jelling would require using some underripe fruit (pectin declines as fruit ripens), LOADS of extra sugar (in fact, more sugar than fruit) and an extended cooking time. Few fruits benefit from this treatment. So we use only ripe fruit and less sugar so the natural taste shines through. Added pectin reduces cooking time which preserves vitamins and flavor.
