Why doesnt chocolate chips melt?

They actually do melt when baked into a cake or cookies it just doesn’t seem that they do because when chocolate melts if it is not disturbed it will keep it’s shape so when you mix the chips into cookies and bake them the chips will actually melt and re harden and remain in the same shape giving the illusion that they never melted in the first place.
