Why have chinese food traditions changed now they live in australia?
The quick answer is that Chinese people open restaurants to support their family and make money by giving local customers what they want. They aren’t opening these restaurants to express authentic local tradition. I don’t think it is a matter of technology, but rather of competing in a competitive market. Chinese food all over the world is different for this reasons. In the USA you see lots of fried and sweet meat dishes, in Indian spicier dishes with “curry like” flavors, in France it is almost never spicy, and in Mexico they have more grilled meats that are almost like fajitas. On the other hand if you go to a primarily Chinese neighborhood you will find that the food is much closer to authentic Chinese food and some restaurants also will have a part of the menu that is traditional Chinese if they feel enough of their customer base wants that. Also if you see what the Chinese staff eats for their staff meal you will see it is quite traditional.
