Why is there a tendency of an Anime story not following the Manga story?

I think the main reason for the slight differences between manga and anime is due to edits and revisions. I think that manga are mostly the original, rough storyline coming straight from the artist with a bit of editing, whereas the anime is usually edited a bit more in order to smooth out rough edges, refine the plot, and stuff like that.
