Because people are like parrots. They do things just because they see others do them or say them. That's all. If anything, flowers should NOT be used as symbol of love because flowers wilt and wither in a few days. To use them as a symbol of love is like saying that your love will be a very short one. I think people should be using cactus if they insist on using plants as a "symbol of love". Cactus last a long time.
