Would you go to a french fry restaurant that served all kinds of fries?

There was a place like that in Santa Monica, Ca a few years back called Benita's Fritias it was really popular in the summer but faltered in cold weather due to lack of foot traffic and ultimately closed after 3 years - the new shop is a traditional Greek Restaurant they just sunk the counter back to accommodate a few tables and they do really well. The main thing to consider is the traffic - if you are going to serve only 1 thing, regardless of shape or add ons, make sure you have the traffic to support it like a mall or near a high school - that way the traffic is there to sustain repeat business.
