Since Sencha Zuiko or any high quality Sencha and Gyokuro contain a lot of theanine (amino acid), the cup will be very sweet with little bitterness if you brew it at a lower water temperature, about 160 degrees. Regular Senchas will not have such a sweet taste when brewed this way. The suggested brewing parameters will allow you to experience the exceptional flavor that you can get only from this tea.
