What is the nutritional profile of honey?
Honey is composed primarily of carbohydrates and water, but also contains small amounts of a wide array of vitamins and minerals, including niacin, riboflavin, pantothenic acid, calcium, copper, iron, manganese, phosphorus, potassium and zinc. Recent studies have shown that honey also contains antioxidants. It seems that honey contains a variety of flavanoids and phenolic acids which act as antioxidants, scavenging and eliminating all the free radicals in our body. Generally, darker honeys have a higher antioxidant content than lighter honeys.
