  1. Cheesy Risotto

    Who doesn’t love risotto when its cooked to perfection?  Now mix in some wonderful cheese and mmm… that is just beautiful.  Risotto is typically made from Arborio or Carnaroli rice. These types of rices can absorb quite a bit of water without becoming mushy.

    I’m working to make these recipes really easy to follow.  So many times I find complicated recipes with many paragraphs of directions.  Unfortunately for me I usually have very limited time so I’m trying to find the most delicious recipes that can be finished in a reasonable amount of time and effort.  I’m working to make these very simple.  Enjoy and tell me what you think.


    • 1 Tbsp olive oil
    • 2 scallions
    • ⅔ cup of Arborio rice
    • 2 cups water
    • ½ tsp instant chicken boullion granules
    • ⅓ cup grated Romano cheese

    Steps for preparation

    • Put 1 Tbsp of olive in the pan and saute 3 scallions in it for 2 minutes
    • Add Arborio rice to the oil and scallions and cook for 2 minutes more.
    • Add 2 cups of water and the chikcen boiullion granules
    • Bring the concoction to a boil then reduce heat, cover, and cook 20 minutes
    • Remove from heat and let stand for 5 minutes
    • Stir in Romano cheese and enjoy!
