Keto bacon cheddar cauliflower casserole

    Ground Beef Mixture
    1 lb. Ground Beef 
    1 tbsp. Bacon Fat
    1 tsp. Cumin
    1/2 tsp. Paprika
    1/2 tsp. Chili Powder
    1/2 tsp. Salt
    1 tbsp. tomato paste
    1 tbsp. Worchestershire

    Casserole Ingredients
    10 oz. Bacon, chopped and fried
    1 medium Head Cauliflower, riced
    16oz. Cheddar Cheese
    1 tsp sodium citrate and enough water to cover the bottom of your pot

    1. cut bacon into thin slices and cook in a saute pan until brown and crispy.

    2. Remove bacon from the pan and set aside. Leave rendered fat in the pan and add your ground beef, spices, tomato paste and worchestershire. Cooking until slightly browned.

    3. While your beef is cooking. Process 1 head of cauliflower into rice. Do this by either chopping the cauliflower very fine or putting in the food processor until it looks like grains of rice.

    4. Place cauliflower in a microwave save bowl and heat for 5 mins. Take it out and fluff it and check for doneness. Microwave 1 min at a time after that until the desired doneness is reached. 

    5. Make your cheese sauce. Just barely cover the bottom of a small pot with water and add your sodium citrate. Stir to dissolve. Then add 14 oz cheese and stir to melt into a velvety cheese sauce. Reserve 2 oz of cheese for topping.

    6. Assemble. Add your cooked cauliflower rice to the bottom of a 9 x 13 baking dish. Then layer your browned ground beef and bacon on top. Finally pour your cheese sauce over the entire surface, sprinkle with remaining cheese and bake at 350 degrees for 20-25 mins.
