  1. Have you heard the old saying “as American as apple pie”?  This is actually not an accurate statement, as apple pie was created in the 1300’s.  Early American settlers brought their apple pie recipes from Europe, but only found crab apples with which to bake their pies.  Apple tree seeds were imported and finally Americans could make their own delicious apple pie recipes.

    Most apple pie recipes can easily be converted for diabetics.  Since apples contain a natural sugar, just replace any sugar in the below recipes with sugar substitutes.

    All apple pies are considered a complete joy when served a´ la mode, which means served with ice-cream.  However, simple cream or half ‘n half milk works wonderfully as well.

    For the health conscious people in today’s modern world, you may want to use alternate flours in the recipes found below.  Some examples of those are whole wheat flour and walnut flour.

    Krazy Krust Apple Pie

    This recipe is the simplest apple pie that you can make.  In the southern United States, it is sometimes called Apple Cobbler.  

    Ingredients:

    • 2 sticks of real butter, not margarine
    • 2 cups of self-rising flour
    • 2 cups of white sugar
    • 2 teaspoons of liquid vanilla flavoring
    • 1 cup of milk
    • (2) 15 ounce cans of apple pie filling
    • One-half cup of brown sugar

    Directions:

    • Pre-heat the oven to 275 degrees.
    • Place the butter in a 9″ x 11″ baking pan and put the butter in the oven to melt. Watch it carefully while you prepare the other ingredients so that it does not burn.
    • Combine the flour, sugar, vanilla and milk in a mixing bowl and blend them until the mixture is creamy.
    • Pour the flour mixture over the melted butter in the baking pan.
    • Top the mixture with the apple pie filling.
    • Sprinkle the brown sugar evenly over the top of the apples.*

    If you are a diabetic, the brown sugar topping can be left out.

     Baking:

    • Bake for one hour or until the outer edges of the crust are brown and the center of the pie is still slightly soft.

    Apple Cream Pie

    This recipe can also be prepared using peaches instead of apples for a real “peaches ‘n cream” taste.  It is a chilled pie recipe and will be a favorite on hot summer days.

    Ingredients:

    • 1 cup of canned evaporated milk
    • Two-thirds cup of sugar
    • 1 teaspoon of cornstarch
    • 3 egg yolks
    • 1 cup of mashed apples, fresh cooked or canned
    • 1 teaspoon of lemon juice
    • 1 cooked pie shell

     Directions:

    •  Scald the milk and sugar together.
    •  Add one-fourth of the cornstarch to the milk mixture. Stir well.
    •  Add the remaining cornstarch to the milk mixture; blend well.
    •  Cook the cornstarch and milk mixture until it thickens.
    • Stir in the mashed apples and the lemon juice.
    • Pour into the cooked pie shell and refrigerate for several hours before serving.

    Bird’s Nest Apple Pie

    Since this recipe makes two pies, consider giving one as a gift and keep one to enjoy.

    Ingredients:

    • 4-5 medium apples, peeled and sliced
    • 2 cups of plain all-purpose flour
    • 1 cup of sugar
    • One-half teaspoon of baking soda
    • One-half teaspoon of cream of tartar
    • 1 cup of sour milk*
    • 2 egg whites

    *Sour milk is made by combining one tablespoon of white vinegar with enough milk to make one cup of the sour milk.  Let stand for five minutes.

    Topping Ingredients:

    • One-fourth cup of sugar
    • One-half teaspoon of ground cinnamon
    • One-fourth teaspoon of ground nutmeg
    • Combine all the ingredients to make the topping.

    Directions:

    • Preheat the oven to 350 degrees.
    • Divide the apples between two greased 9-inch pie plates; set aside.
    • In a mixing bowl combine the flour, sugar, baking soda, cream of tartar, sour milk and egg whites.  Mix well.
    • Divide the batter and pour it over the apples in the two pie plates.

    Baking:

    • Bake for 25-30 minutes until the pies are lightly brown.
    • Invert the pies over serving plates and sprinkle the pies with the topping. *

    *For a variation to the topping, add your own favorite flavors such as fresh peppermint or crushed candy toppings.
