     Indian Red Curry Recipe with Chick Peas – Chole Chana

    Serves: 4
    3 ½ tablespoon of Canola Oil
    1 Bay Leaf
    2 teaspoon of Cinnamon Powder
    1 teaspoon of Clove Powder
    1 ½ cup of Onion Puree
    1 ½ teaspoon of Garlic Paste
    1 ½ teaspoon of Ginger Paste
    1 ½ cup of Tomato Puree
    2 ½ teaspoon of Red Pepper Powder
    2 ½ teaspoon of Coriander Powder
    1 teaspoon Turmeric Powder
    2 teaspoon of Garam Masala Powder
    1 cup of Warm Water
    3 ½ cup of Cooked or Canned Chickpeas
    Salt, as per Taste
    1 tablespoon of Cilantro for Garnishing
    • Soak the chickpeas for about 7-8 hours before using them. You can also buy canned chickpeas which are already cooked and ready to use.
    • Boil chickpeas until it gets soft if it is not cooked.
    • Put a saucepan on a stove over high heat.
    • Pour the oil and let it heat up.
    • Add bay leaf, cinnamon powder and clove powder. Immediately, add the onion puree after adding all these dry ingredients.
    • Let the onion puree cook until it gets light brown color.
    • Add garlic and ginger paste. Mix it well.
    • After few minutes, pour the tomato puree in to the saucepan. Give it a good stir.
    • When the oil starts to come out from the edges, put all the dry ingredients, such as red pepper powder, coriander powder, turmeric powder, salt, and garam masala.
    • Pour the warm water and let it sauté all these spices and vegetable’s paste for five to ten minutes. It would get thick texture and thus your Indian red curry is ready.
    • Now, Add cooked or canned chickpeas in to the curry and mix it well.
    • Let it cook and mix all the ingredients together for about ten to fifteen minutes.
    • Sprinkle cilantro on top of the chole chana curry for garnishing.
    • Serve hot with either Indian bread also known as naan or rice.

    Thai Red Curry Recipe with Vegetables and Chicken

    Serves: 4
    4 tablespoon of Oil
    1 cup of Warm Water
    7-8 Soaked Red Dried Chilies
    3-4 Thai Fresh Red Chilies
    1 cup of Small Pieces of Shallots (Substitute Red Onion)
    3 – 4 Big Cloves of Garlic
    2 ½ tablespoon of galangal (Substitute Ginger)
    3 – 4 of Kaffir Lime’s Peel or Lime Leaf
    3 tablespoon of Finely Chopped Coriander (Cilantro) Root
    2 ½ tablespoon of Chopped Lemongrass
    2 teaspoon of White Pepper
    1 teaspoon of Whole Cumin
    2 teaspoon of Brown Sugar
    2 cup of Thinly Sliced Green Pepper
    1/2 cup of Mushrooms
    2 cup of Coconut Milk
    2 ½ cup of Small Chunk of Chicken
    Salt, as per Taste


    • Soak red dried chilies in to hot water for about three to four hours.
    • Get started by plugging in the blender and adding all the ingredients one by one.
    • Add the Soaked red dried chilies and fresh Thai red chilies in the blender and blend it well.
    • Add small pieces of shallots and cloves of garlic. Crush it well.
    • Put galangal, kaffir lime’s peel or leaf itself in to blender. Mix it well.
    • Add finely chopped coriander root and chopped lemongrass. Blend it with other ingredients.
    • Now, add all the dry ingredients, such as white pepper, whole cumin, brown sugar, and salt. Blend all these ingredients until it gets paste like texture.
    • Put a saucepan on a medium heat and add three tablespoon of oil.
    • Empty out the mixture from blender’s jar in to the saucepan and mix it well.
    • Stir it until all the water or excess moisture evaporates from the curry paste.
    • When all the water evaporates and you can see the oil coming out from the edges, then your Thai red curry is ready.
    • You can preserve it in a dry and clean jar and you can keep it refrigerator. You can use it as much as you like as per your taste.
    • In another saucepan, put one tablespoon of oil and add Thai red curry paste.
    • Immediately, add thin slices of green peppers and small pieces of mushrooms. Sauté these vegetables with the red curry paste.
    • Pour in the coconut milk and let it simmer for a while.
    • Add the small chunks of chicken in to this liquid mixture and let it cook until it gets tender.
    • Serve it hot and garnish it with fresh red chilies.

    Japanese Curry Recipe with Vegetables

    Serves: 4
    2 tablespoon of Oil
    1 ½ cups of Small Pieces of Potatoes
    1 ½ cups of Small Pieces of Carrots
    1 ½ cups of Small Pieces of Onions
    1 ½ cups of Small Pieces of Broccoli
    1/2 cup of Green Peas
    2 cups of Vegetable Broth
    1 box of Japanese Curry/Sauce Mix (Readymade)
    Salt, as per Taste
    • Put a saucepan on a stove over a high heat and add small pieces of potatoes, carrots, onions, and broccoli.
    • Let it sauté for a while and then add vegetable broth.
    • Add the green peas in to the mixture and bring it to the boil.
    • Lower the heat from high to medium and cover the saucepan with lid.
    • Cook until all the vegetables get tender.
    • Add the ready made Japanese Curry/Sauce Mix. Mix all the ingredients together. 
    • Keep stirring until the cubes of curry mix dissolves properly with the vegetables. 
    • You can also add meat as per your choice instead of all the vegetables.
    • Serve hot with rice. Garnish it with finely chopped broccoli on top of it.

    Chinese Curry Recipe with Chicken

    Serves: 4
    2 tablespoon of Oil
    1 cup of Thinly Sliced Onion
    1 cup of Thinly Sliced Red Pepper
    1 ½ of Garlic’s Paste
    1 ½ tablespoon of Ginger’s Paste
    1 ½ teaspoon of Green Chili Pepper’s Paste
    2 teaspoon of Black Pepper’s Powder
    1 tablespoon of Soy Sauce
    1 tablespoon of Curry Powder (Readymade)
    1 ½ tablespoon of Corn Starch
    1 tablespoon of Water
    1 cup of Chicken Broth
    1 ½ cup of Chicken
    Salt, as per Taste


    • Put one saucepan on a stove over a high heat and add oil.
    • Add thinly sliced onion and sauté it until it gets tender.
    • Add thinly sliced red pepper and sauté it for few minutes.
    • Add garlic, ginger, and green chili pepper’s paste and mix with other ingredients.
    • Add black pepper’s powder and curry powder. Immediately, after then add soy sauce in to the mixture.
    • In one small bowl, mix the corn starch with water. Pour this mixture in to the saucepan. This would work as thickening agent for your curry.
    • Pour in the chicken broth and let it simmer. Your Chinese Curry is ready.
    • Now, you can add pieces of chicken in to this curry.
    • Let this mixture to cook until the chicken is properly cooked.
    • Serve it hot with rice. Garnish it with two green chilies on side.
