  1. Ever wondered what to do with all the Thanksgiving leftovers? There is the usual second, third, or even forth plate. A turkey sandwich is good, but more of the same old thing as the year before. Why not something new for a change? Well this recipe is the answer. It is so easy and quick, but delicious and filling as well. It is a true crowd pleaser.

    What you will need: (Remember this is all precooked because it’s leftovers, so simple.)

    • Enough dressing/stuffing to fill the bottom of a pie dish
    • 1 to 1-1/2 cups mashed potatoes (depends on the size of your dish)
    • 1 to 2 cups chopped turkey
    • 1/2 cup gravy
    • 1/4 cup shredded cheese

    Preheat your oven to 350 degrees. In a pie dish press the dressing/stuffing into the bottom just as if it were dough. Make it about one half inch thick. Place this in the oven for ten to twenty minutes or until it has turned golden brown. Remove the pie dish from the oven and fill with the mashed potatoes. Next, top the potatoes with the chopped turkey. Drizzle the whole thing with gravy and sprinkle with the shredded cheese. Return the “pie” to the oven and bake until hot and the cheese has melted. This should only take approximately twenty minutes or so.

    To serve, cut into wedges just like a real pie with hot buttered rolls and extra gravy on the side. A crisp green salad will compliment this dish nicely. This is a fast solution as to what to do with your thanksgiving (or even Christmas) leftovers. Enjoy.
