Does anyone have a good recipe for a lowfat salad dressing?
There’s a tasty dressing that I have devised myself, being a salad fan. Since I don’t always measure, and tend to go by taste, the following are approximations, and can be easily adjusted depending on what you do and don’t like. Also keep in mind that the following will make enough dressing for a large (meal-sized) salad for one, but measurements can be easily adjusted if you’re making salad for several. I have not tried mixing up and storing large batches, so I’m not sure how it keeps. This dressing goes well on a Mexican-themed salad (I love Mexican), in which I usually include a combination of the following, depending on what I have on hand: Romaine or iceberg lettuce Tomato(es) Avocado Bell peppers Kernel corn Chopped green or red onion Black beans, taco-seasoned ground beef or chicken A wee bit of grated cheddar cheese The dressing (measurements are approximate): *1-2 tablespoons of chopped fresh cilantro *1-2 teaspoons of lime juice (lemon also works, if you don’t have lime) *1/4
