Does anyone have a really good potato salad recipe?
Our potato salad is always very popular at holiday dinners. First, boil 5 lbs. of white potatoes (until fork tender) and one egg for each potato (simmer for 16 minutes after they come to a boil). Then, peel the potatoes and eggs once they are cool enough to handle. Cut potatoes into chunks and put in a large bowl. Cut eggs in half and separate egg whites and yolks. Cut egg whites into chunky pieces and put in bowl with potatoes. Put egg yolks in a small bowl, mash, and mix with about 1 cup of mayonnaise and a few tablespoons of mustard (just a guess here on the quantities). Add salt and black pepper to taste. Mix yolk mixture in with potatoes and egg whites. DO NOT ADD ANYTHING ELSE, no matter what other people may tell you. No one really wants celery, pickles, or any other green items in their potato salad!!
