Gather and prepare the below items for this recipe: (Gluten-Free Muffin Ingredients) * 1-3/4 cup whole wheat flour * 1/2 teaspoon pure vanilla extract * 1 tablespoon baking powder * 1/2 teaspoon salt * 2 table granulated sugar * 3/4 cup grated sharp cheddar cheese * 1 large egg * 1 cup reduced fat milk, or skim milk * 1/4 cup melted margarine Preheat oven to 400 degrees F. Combine the milk, vanilla extract, whole egg, and margarine in a large bowl. Next, fold in the cheddar cheese, mix well. Make a well in the center. In another bowl, blend together whole wheat flour, baking powder, strong cheddar cheese, sugar, and salt; stirring until no lumps and flour is completely dissolved.
