No respectable Englishman would ever waste a good beer on a fish batter. I grew up in Northern England the home of Fish n’ Chips with mushy peas and collected newspapers as a kid to get a bag of scrumpy from the local “chippie” Using large baking potatoes, King Edwards in England, cut into large chips and soak in cold water. Make the batter, save the beer for drinking later with the fish n chips. Cut your fish into portions, not too thick. TRUE BRITISH BATTER FOR FISH. 1lb AP Flour 1 packet of yeast or 1/4oz fresh yeast 1 cup warm water 1 tsp Salt 1tsp Baking Powder 1tsp Malt Vinegar Dry Mustard, Paprika, Onion powder and Garlic powder (optional) I added these spices after moving to the USA for a bit of a kick.
