How Do You Make Fake Rice A Roni?
Rice a Roni is around $2 a box. I think that’s outrageous. You can fake it, and make an even better tasting clone for a lot less money. Take a 1 to 1 1/2 cup of rice and 1/2 to 1 cup of noodles, and put them into a pan. Add 2 tablespoons of oil, or more if you like oil. Heat it gently and fry it until the noodles start to get brown. Stir it around to keep it from burning. When the noodles are toasty, and the rice starts to go white to tan, add around 2 cups of water. Also add 1 teaspoon of powdered chicken stock, more or less. The powder is almost all salt, so you don’t need to add salt (conversely, if you use fresh stock, add some salt). If you want, you can also add chopped garlic or a handful of chopped almonds or pine nuts. This is optional, but it makes the rice taste even better. When the rice boils, reduce it to a simmer and cover. Cook it for around 15 minutes, checking it every few minutes to make sure it’s not burning.
