An English Christmas Cake is traditionally coated with marzipan before icing. Learn how to make this confection in a few easy steps. Place 15-20 ounces of sliced peeled almonds into a food processor. Process until finely ground. Put the sugar (castor or fine fruit sugar is the best if you can find it) into a large bowl. Add the Powdered sugar and 12oz by weight of the fine ground almonds. Beat the three egg whites lightly in a separate stainless steel bowl until foamy. Add the egg whites to the almond/sugar mixture and mix well.
