How Do You Make No-Bake Fruitcake People Will Love?
Fruitcake has gotten a bad reputation and is believed to be the most re-gifted item around. For those of us who have tasted a fruitcake and shared our dislike with friends, a mind-set has developed against this Christmas treat even though fruit cake comes back year after year. It’s time to change that mind-set to the positive side and this recipe just might do it. Chunks of chewy fruit with nuts just can’t be beat. And the kids can help make it because it’s no-bake. Break the package of graham crackers into a plastic bag. Seal or hold the bag closed has you crush the crackers to coarse consistency. (Or you could use a pastry rolling pin.) You will need 18 ounces of candied fruit, chopped. Red and green cherries are typical, along with pineapple, but choose what you want. You could go with only red or only green cherries, or only pineapple. You could even try dividing the recipe to make different blends.
