How Do You Make Shoyu (Soy Sauce) Chicken?
This chicken is enormously popular in Hawaii, served at local eateries around the state. This method is time-consuming but simple, and the outcome is delicious! Combine the soy sauce, sugar, water, garlic (pressed), and onion (chopped) in a pot large enough to fit the chicken thighs. Do not add chicken thighs yet. Simmer ingredients on low-medium heat for five minutes. Stir, and taste with a wooden spoon. It should be slightly sweet to the taste; if not, add sugar one teaspoon at a time. Add chicken thighs, and keep sauce on low-medium heat. Cook, uncovered, for 30 minutes. Turn the chicken thighs over in the sauce and cook for another 30 minutes. Continue this cycle two more times until the chicken has been cooking for two hours. After two hours, the chicken should be very tender. Remove it from heat. Take the thighs out and place on a serving platter. Pour two ladles full of sauce over chicken and serve.
