Step 1 Heat oil in large saute pan over medium heat. Season thighs with salt and pepper and cook in pan for 2-3 minutes on each side until brown. Step 2 Add zucchini and stir occasionally until zucchini is lightly browned. Step 3 Add garbanzo beans, tomatoes, water, cayenne pepper, cumin, and cinnamon. Turn heat to low and simmer for 1015 minutes until chicken is tender. Garnich sith chopped cilantro and serve.
