How Do You Prepare Scrumptious Blueberry Lemon Bars?
Blueberry Lemon Bars are a colorful and easy delicious treat that will grace your dessert table for the holidays or travel nicely to take to a party or pack in your child’s lunch box. Blueberries and Lemon are HEALTHY for you, too. 1. Heat oven to 350 degrees. Line a 13 X 9 X 2-inch baking pan with aluminum foil. Coat foil with nonstick cooking spray. 2. CRUST: In bowl, stir together butter, confectioners’ sugar, vanilla and salt. Gradually stir in flour until smooth. Press dough over bottom of prepared foiled-pan. 3. Bake in 350 degree oven for 20 minutes or until edges are brown. FILLING: In a large bowl, mix granulated sugar and flour. Whisk in the eggs until they are smooth. Stir in lemon rind and lemon juice. Gently fold in the cup of blueberries. Pour FILLING over crust. BAKE in 350 degree oven until set, 30 minutes. Let cool in pan on a wire rack so air flow gets under the pan. When cooled DUST with the 1/4 confections’ sugar.
