You really don’t take oils to their boiling point. Each oil has a smoke point, which is the temperature that you can heat oil before it starts to smoke and discolor. The smoke point for corn oil is 450 degrees F, and the smoke point for olive oil is between 320 and 468 degrees F, depending on the type of olive oil.
