What is the difference between Tavern Ham and Pit Ham ?

Our Tavern ham is hung on an “oven tree” and appeals to the consumer seeking the “traditional” ham. The Pitt ham has a longer cure cycle and is cooked in a “smokey netting” (giving it the surrounding dimples).
