Why does fudge taste grainy?
The reason for the gritty texture is sugar crystallization. You can use marshmallow cream or cream of tartar to retard that. We knew from the start that was going to be an issue and we would have to address it. A lot of people have that impression. It’s not usually considered a sophisticated dessert. A lot of people are leery of buying fudge because it varies so much. But wouldn’t it be great to revamp everybody’s notion of fudge, to create a new concept of fudge? How is your fudge different?
