When potatoes turn green, they are filling with toxins. It is the chemicals the potatoes are producing. You won’t get sick or die from eating a few green potatoes, but you shouldn’t eat them. If you ate a whole bunch of green potatoes, you could become sick.

Potatoes that turn green have been exposed to light. Solanine is produced when the potatoes are exposed to sunlight. Even fluorescent lighting at the supermarket can make them turn green. It is a toxin and can build up in the body until it is dangerous to humans. So do not eat the potato if it is green, return them instead. You can’t easily trim it off as the solanine goes deeper into the potato than the green part you are trimming off. The toxin doesn’t leave the body but stays in it usually so that is how you get a buildup of it.
