The Favorite Here in New England. is Corned Beed and Cabbage We have it every St Patrick’s Day. We are having it tonight. CORNED BEEF & CABBAGE NEW ENGLAND BOILED DINNER 3-5 lb. Corned Beef Brisket 4-6 potatoes, peeled (cut Large ones quartered, Med. Ones halved, little ones whole so that they are all uniform in weight size) .) 4-6 med. carrots, peeled (if using hole carrots cut them into approx 2 inch sections the fatter ones a little shorter so that they are all uniform in weight size) 1 cabbage, cut into 8 wedges if large 4 wedges if small. If corned is packaged do not add spice packet to cook the meat. Rinse meat with cold water and place corned beef in large pan with cover. Add enough water to cover meat. Cover pan. On high heat bring to a boil then turn to simmer and cook 1 1/2 hours, remove any skim that forms on the top of water. Cook 30 to 40 minutes per pound, until fork tender. Add 1/2 hour before meat is cooked, add potatoes. Bring to boil on high heat, then turn down to si
