What is your favourite simple vegetarian recipe using brown rice?
Here’s an old family favorite. It’s easy. You just throw it together and bake. Brown Rice and Bean Casserole: 1 1/2 cups brown rice 1 15 oz. can pinto beans, drained 1 15oz can black beans, drained 1 15 oz. can Mexican style diced tomatoes 1 8 oz can tomato sauce 1 4 oz. can green chili peppers diced 1 small or 1/2 large onion, diced 2 cloves garlic minced. 3 cups shredded cheddar cheese. 2 eggs beaten Salt and pepper to taste. Hot sauce to taste. I use a Mexican hot sauce. Tabasco or even cayenne pepper will work just as well. Cook the rice. Put it in a large bowl. Combine rice beans, tomatoes, tomato sauce, chili, onion, garlic, eggs, and half the cheese, hot sauce, salt and pepper to taste. Pour all into a 13 X 9″ baking dish. Top with remaining cheese. Bake at 375 degrees 30 – 40 minutes. I serve garlic toast, dinner rolls and a salad.
