This can be put together the night before and baked in the morning so that you can relax and enjoy opening presents. Preheat oven to 350 degrees. Melt margarine in the bottom of a 9 x 13 baking dish. Spread the diced potatoes in the bottom of the baking dish. If you are using frozen hash browns there is no need to thaw first. Spread chopped onion and tomato over the potatoes and sprinkle with salt and pepper, to taste. Spread your choice of meat over the vegetables. You can use either 1/2 pound cubed ham, 1/2 pound crumbled bacon or 1/2 pound crumbled sausage. If you are preparing the night before stop at this point and cover the dish and place in the refrigerator. Beat 12 eggs and pour over the meat. Sprinkle the red and green pepper over the eggs.
