Southern-style sausage stuffing is a delicious twist to your standard Thanksgiving or Christmas stuffing. This recipe will stuff a 10 to 12 pound Turkey and still leave you with enough to use as a side dish as well. Preparing your sausage stuffing: Start by sautéing the onion, celery and green pepper in butter. For best results use a deep heavy skillet. Do Not Rinse When Done. Place bouillon cube in 2/3 cup of hot water stirring until completely dissolved. Put dry breadcrumbs and crumbled corn bread into a large mixing bowl and drizzle the bouillon mixture over the top of the breadcrumbs. Add your sautéed veggies to the bowl with your stuffing mixture and toss lightly together. Be careful not to handle it too much. Using the same skillet that you sautéed your vegetables in add your diced or cut up sausage pieces and cook until done and browned. Then remove from heat. Now add to your stuffing mix the following ingredients: sausage bits, salt, pepper, poultry seasoning, pecans (optional)
