This recipe is pretty challenging, because you need all the materials and time it takes to prepare, but don’t worry because when it’s done you will appreciate all your hard work with every tasty morsel. Cover potatoes with water in large saucepan. Bring to boil over high heat. Reduce heat to medium and simmer until very tender but not mushy, about 30 minutes. Drain well. Transfer potatoes to large bowl of electric mixer. Add butter, cream, parsley, salt, nutmeg and pepper and beat until smooth. Add cheese, blending well. Let cool, then chill several hours or overnight. By hand or with 2 large spoons, form mixture into potato shapes using about 1/2 cup for each. Gently dredge in flour; coat with egg, then breadcrumbs. Arrange on baking sheet. Chill 1 hour or overnight. Heat oil for deep frying in large saucepan or work to 350 degrees F. Add croquettes in batches of 6 and fry until crisp and browned on all sides, about 4 to 5 minutes. Drain well on paper towels. Serve immediately.
