Cheddar cheese is a natural cheese made from milk received from dairy farms and is sold in a variety of sizes from 500 lb. Barrels, to 40 lb. Blocks, to small wheels referred to as Daisy’s or Midgets. When first made, the cheddar cheese is referred to as “Mild”. As the cheese is aged in temperature controlled “curing rooms” the cheese takes on a sharper (more acidic) flavor. Some cheddar cheeses are aged for as long as 10 years before being offered for sale. Like other natural cheeses, cheddar cheese is white in color unless the cheesemaker adds annatto coloring during the make process. Our X-Sharp White Cheddar is over 2 years old, while the Vintage Cheddar is over 4 years old.
