Obviously, only those with the label would qualify. However, farm-produced also means raw milk and traditional know-how . This involves, among many things, the quality of the animals’ food, the conditions on the farm, the handling of the milk and of the cheeses. It is obvious that the cheese resulting from free-roaming cows in the pasture, feeding exclusively on hay, is the most wholesome, but this process does not always meet the organic criteria. These criteria sometimes even hinder certain production methods or simply require very extensive improvements for the producers.
