Never make elderberry wine entirely of elderberries or you have to wait years before it is drinkable. The fruit contains a lot of tannins which has the same effect as strong lemon juice. Try this recipe for a Rose wine which will be ready in a year, 1Kg elderberries, 475g really ripe bananas,( I mean really ripe, going black!) 450 chopped sultanas, 450 white sugar. squeeze of half a lemon. Wine yeast with nutrient. Pour a couple of pint of boiling water over the berries and leave to cool for half an hour, crush the berries with a potato masher or your hands and strain the liquid off into a bucket containing the sultanas and sugar. Simmer the peeled and chopped bananas for half an hour in a pint of water and strain into the bucket. Add three pints or so of boiling water to the bucket to make sure the sugar is fully dissolved. When cool add the yeast, stir every day for three days. Strain into a demijohn, top up with boiled water and leave under the airlock until fermentation ends. Fine
