Do all laptops have detachable keyboard keys?

No, not all laptops have detachable keys (Macbook is an example). There are 4 kinds of keys really. The most common are the scissor connectors which are fairly fragile plastic pieces, but can be taken apart. You may also have a custom recessed build where the keys are inset into the keyboard and topcase (like the Macbook or Unibody MacBook pro). You’d have to remove the whole top case to get at the keys, and then they don’t really come apart. The other style is what I call the clicky keys. You usually don’t see these on laptops, but rather, either old IBM computer keyboards that weigh 8 pounds, or high quality newer ones (typically costing over $80). You likely don’t have these on a laptop due to sheer weight. The last style is common more on desktop keyboards and some laptops, which are just caps over a post with a sensor in them. Probably what you’re used to already. A tell-tale sign that you have the inset keys is if the top case shows between the keys. If you have the scissor style
