Do I have to do a detailed stocktake or can I just make an approximation?

An estimation of your stock for tax purposes is not a proper stocktake. An accurate document of what stock you have at hand and work in progress must be included each year in your lodgement. Closing stock can be valued at cost, replacement or market value or less if obsolete. However you must document what method you will be using.
