Usually, black olives are kept in oil and green olives in brine. If you’d put the black olives in glass jars the oil on the glass walls won’t be very pleasant to see. On the other hand, brine in metal cans may corrode the can on the inside.However, I saw also black olives in brine, also in metal cans, for the same reason.
