Does Anyone Have A Good Recipe For Butternut Squash?
AS well as just cutting them up like potatoes and roasting them, my favourite butternut squash recipe is based on one from Jamie Oliver: You scoop out the flesh, mix it with rice, a few sun-dried tomatoes and lightly toasted pine nuts (or anything else you fancy: Feta cheese is good too) put it all back into the skins, wrap in foil and bake for about an hour and a quarter until soft and the rice is cooked.
