Hot Chicken salad: Make your chicken salad as you like. (I usually chop the chicken, add chopped celery, onion flakes, mayonnaise and a dash of cooking sherry or lemon juice.) You can suit your own taste and texture, but don’t add salt. About four cups. Then add a can of cream of chicken soup. Spread the mixture in a 9×12 baking dish. Top with a layer of sliced hard boiled eggs, slices of american cheese and a layer of crushed potato chips. Bake at 400 till the cheese is melted. Waldorf salad is easy too. Chop your chicken up to whatever size you like it. Add diced apple, halved or chopped seedless grapes, diced celery and chopped walnuts. Use mayonnaise with a little lemon juice and salt and pepper to taste. You can make chicken aspic with canned broth if you want to get fancy–it’s chicken flavored jello, actually. I make it with broth and Knox gelatin. Pour enough into coffee cups to just cover the bottoms. Refrigerate till solid. (I stick them in the freezer for about 5 or 10 minut
