Ok….I pulled out my old Betty Crocker cook book and here is how the recipe reads: 2 large eggs (or 4 egg yolks) 1/3 + 1/2 cup sugar 1/4 tsp. salt 2 cups milk 1 tsp vanilla extract 2 cups cooked white rice 1/2 cup seedless raisins Beat the eggs, sugar and salt slightly to mix. Scald the milk and temper into the egg mixture. Mix in rice and raisins. Pour into a 1 qt casserole and set in a pan of water (1″ deep). Sprinkle with nutmeg. Bake1 hr 15 min. in a 350 degree oven.
