You can substitute the whole amount or just part if you want to. Be aware that using applesauce instead vegetable oil will change the consistency/density of your product. Some people prefer to only substitute 1/2 to keep the consistency closer to the original. My advice is to go by trial and error to find what you like. Try substituting all of it, if you don’t like the consistency, cut back a little the next time.
