Does microwaving soy milk effect its nutrients?
Correct it does not affect the values of the soya milk, and is the best way to heat soya milk or any of the other non dairy milks, as boiled or heated to quickly it can revert back to to a mass and liquid a.k.a splits like a tree with an axe in it. You can use it for cooking but use a starch like tapioca or arrowroot that thicken and don’t require a full boil to cook the raw taste out, cornstarch and flour are not best for that technique. I make a soya cheese sauce for a Mac and Cheese with it and have not problems keeping it together.
