Cookies in general are made with a good percentage of sugar. Since our cookies have to be made with a certain minimum percentage of organics, it would be difficult doing so without an organic sweetener. Until recently, xylitol and Stevia could not be used in organic products. Now, there are organic forms of xylitol and Stevia available , but currently, the prices of those ingredients make them cost prohibitive to use.
