Put the bananas in a paper bag and close it – it doesn’t have to be fully sealed, just fold over the top. What this does is traps the ethylene that the bananas naturally produce (and are also gassed with, prior to being shipped to supermarkets) inside the bag, causing the bananas to ripen more quickly. Once the bananas have reached the desired stage of ripeness, remove them from the paper bag and put them in the refrigerator – this will slow down the ripening process. While in the refrigerator, and in a very short period of time, the skins will turn very dark in color – but don’t be alarmed. The fruit inside will keep for several days before becoming over-ripe.
