How do I cook Sommers Organic™ meats?
Our organic grass-fed cattle eat a strict diet of organic grass, therefore they are high in protein and low in fat. Because of this, grass-fed organic beef must be cooked gently. Cooking methods for organic poultry and pork do not differ from non-organic meats because they are fed a diet of grain. Steps for cooking Sommers Organic™ meats: • Use a good meat thermometer, not a timer. • Turn down the heat. Either reduce the temperature of your recipe by 50 degrees or reduce the cooking time. • When grilling beef, sear quickly over high heat on each side to seal in the natural juices, then reduce the heat to medium or low to finish the cooking process. • Cover meat after cooking and let rest to allow the juices to redistribute. • Never turn meat with a fork. Always use tongs. • Thaw frozen Sommers Organic™ meat in refrigerator for 1-2 days, or until thawed. Never use a microwave to thaw your organic meat.
